Sourdough Starter Won't Rise: Troubleshooting Guide

Few things are more frustrating than feeding your sourdough starter day after day and seeing absolutely nothing happen. No bubbles, no rise, no signs of life. You start wondering if you did something wrong, if your flour is bad, if the starter is dead. Take a breath. In almost every case, a flat starter is a fixable problem. Let me walk you through the most common reasons starters refuse to rise and exactly what to do about each one.
1. It Is Too Cold
This is the number one reason starters seem inactive. Sourdough cultures are living organisms, and temperature affects their activity dramatically. Below 70°F (21°C), fermentation slows way down. Below 65°F (18°C), it can appear to stop almost completely. Your starter is not dead, it is just cold and sluggish.
The fix: Move your starter to a warmer spot. The ideal range is 75 to 82°F (24 to 28°C). Try the top of your fridge, inside your oven with just the light on, near a radiator, or in a proofing box. You should see activity increase within one to two feedings.

See on Amazon →If you are feeding a tiny amount of starter with a massive amount of fresh flour, the culture is being so diluted that it takes forever to colonize all that new food. Conversely, if you are barely adding any fresh flour, the starter runs out of food quickly, peaks while you are not looking, and has already collapsed by the time you check on it.
The fix: Stick with a 1:1:1 ratio by weight, equal parts starter, flour, and water. For most home bakers, that means 50g starter, 50g flour, 50g water. This gives the culture enough fresh food without overwhelming it.
3. Wrong Flour
Bleached all-purpose flour and heavily processed white flour can struggle to support a vigorous starter. The bleaching process and extensive milling remove many of the natural microorganisms and nutrients that wild yeast and bacteria need to thrive.
The fix: Switch to unbleached all-purpose flour or whole wheat flour. Even adding just 20% whole wheat or rye to your feeding can make a noticeable difference in activity.
4. Chlorinated Water
Heavily chlorinated tap water can inhibit the microorganisms in your starter. Chlorine is designed to kill microbes, and while municipal water levels are generally safe, some areas have higher chlorine levels that can slow things down.
The fix: Let your tap water sit uncovered for 24 hours before using it (chlorine evaporates), use filtered water, or use bottled spring water.

5. You Are Checking at the Wrong Time
Your starter might actually be rising and falling on schedule, but you are only looking at it twice a day and missing the peak entirely. By the time you check, it has already risen, peaked, and collapsed back down. It looks flat, but it was active all along.
The fix: Mark the level right after feeding. Check every 2 to 3 hours to see when it peaks. If it has already collapsed by your next check, it is rising, you are just missing it. Adjust your feeding schedule or use a higher ratio to slow the rise.
6. Your Starter Is Brand New
If you just created a starter from scratch in the last week or two, patience is the most important ingredient. New starters go through phases. The first few days often show rapid activity from leuconostoc bacteria, followed by a quiet period of seemingly no activity that can last 3 to 7 days while the real sourdough organisms establish themselves.
The fix: Continue feeding once or twice daily at a 1:1:1 ratio. Keep it warm. Be patient. Most starters fully establish themselves within 10 to 14 days, but some take up to three weeks.

7. Your Jar Is Too Big
If you are feeding 50g of starter in a wide-mouth quart jar, the rise can be so spread out that you barely notice it. The starter might be doubling in volume, but because the jar is wide, the height change is minimal.
The fix: Use a tall, narrow jar. A pint-sized mason jar or a tall glass container makes the rise much more visible.
