Why Sourdough Sandwich Bread
Sourdough fermentation makes sandwich bread more flavorful, more digestible, and longer-lasting than commercial yeast versions. The natural acids act as preservatives, keeping the bread fresh for 4-5 days without additives.

The Recipe
Mix 500g bread flour, 250g milk (warm), 100g active starter, 50g softened butter, 30g honey, 10g salt, and 1 egg. Knead by hand for 10-12 minutes or use a stand mixer with a dough hook for 6-8 minutes until the dough passes the windowpane test.
Bulk ferment for 4-6 hours until doubled. Shape by rolling the dough into a tight log and placing it seam-side down in a greased 9x5 inch loaf pan. Cover and proof for 2-3 hours until the dough rises about an inch above the rim of the pan.
Baking and Cooling
Brush the top with an egg wash for a golden, shiny crust. Bake at 350°F for 30-35 minutes until the internal temperature reaches 190°F. The lower baking temperature compared to artisan sourdough produces a softer, thinner crust.

Remove from the pan immediately and cool on a wire rack. Resist slicing for at least an hour — the interior structure sets as it cools. For the cleanest slices, wait until the loaf is completely cool and use a serrated knife.
Storage and Variations
Store in a bread bag or wrapped in beeswax wrap at room temperature. The sourdough acids keep mold at bay for several days longer than standard bread. For longer storage, slice and freeze — frozen sourdough toast is excellent.
For whole wheat sandwich bread, substitute 150g of the bread flour with whole wheat. Add an extra tablespoon of honey and 20g more milk to compensate for the increased absorption. Oat milk makes a dairy-free version that is equally soft.
