If you run an outdoor pizza oven above 430 °C (800 °F), pure Neapolitan 00 is built for that blast and will not scorch before the center sets.
Mixing and Bulk
Dissolve the 105 g starter into the 375 g water, then add the 600 g flour and mix to a shaggy mass. Rest 20-30 minutes, then add the 15 g salt and optional 12 g oil, and knead by hand 5-8 minutes until smooth and slightly tacky, passing the windowpane test (a stretched piece goes translucent without tearing).
