The 30-Minute Rest That Transformed My Sourdough: Understanding Autolyse

The straightforward sourdough process is to dump everything in a bowl, flour, water, starter, salt, mix it together, and start folding. That makes fine bread. An autolyse turns "fine" into noticeably better in a single bake: the dough is smoother, easier to handle, and the finished loaf has a more open crumb with a better chew. The only change is letting the flour and water sit alone for 30 minutes before adding anything else.
Autolyse is one of those techniques that sounds fancy (it was developed by the French baking professor Raymond Calvel) but is actually the laziest, most hands-off improvement you can make. You literally do nothing and the dough gets better.
What Happens During Autolyse
When flour meets water, two things start happening immediately. First, the starch granules absorb the water and swell. Second, the proteins glutenin and gliadin begin to hydrate and connect with each other, forming the early gluten network. This all happens without any kneading, folding, or mechanical effort from you.

By the time you come back to the bowl, the dough has already done a significant amount of the gluten development work for you. It will be smoother, more cohesive, and more extensible, meaning it stretches further before tearing. That extensibility is exactly what you want for achieving an open crumb and good oven spring.

- Combine flour and water in your mixing bowl. Use the water temperature and quantity from whatever recipe you are following.
- Mix until no dry flour remains. It does not need to be smooth, just a shaggy, rough mass with everything hydrated.
- Cover the bowl and walk away for 30 to 60 minutes.
- Come back and add your starter and salt. Then proceed with your normal process.
That is it. No special equipment, no extra ingredients, no technique to master. You just wait.
When to Add the Starter: Before or After?
This is the great autolyse debate, and honestly, both approaches work. The traditional Calvel method is flour and water only, no starter, no salt. You add both after the rest. The reasoning is that the acids in the starter can tighten the gluten and reduce extensibility, which is the opposite of what you want during autolyse.
But many excellent bakers add the starter with the flour and water and only hold back the salt. The fermentation gets a head start, and the finished bread rarely differs in a meaningful way from one made with a pure flour-water autolyse.

Salt is always held back, though. Salt tightens the gluten network and slows fermentation. During autolyse, you want maximum hydration and relaxation, so the salt waits.
How Long Should You Autolyse?
The short answer: 30 minutes is the sweet spot for most home bakers. But the full answer depends on your flour.
- White bread flour (30-45 minutes): Hydrates relatively quickly. Thirty minutes gives you most of the benefit. Going beyond an hour shows diminishing returns.
- Whole wheat or whole grain flour (45-90 minutes): The bran particles are like tiny knives that cut through gluten strands. A longer autolyse lets the bran soften and the gluten develop more fully, which compensates for the damage.
- High-extraction or freshly milled flour (60-120 minutes): These flours have more bran and germ, and they absorb water more slowly. A longer rest gives them time to fully hydrate, which improves both texture and flavor.
Does It Really Make a Difference?
Try this experiment with your next two bakes. Make the same recipe twice, once with a 30-minute autolyse and once without, mixing everything together at the start. Keep all other variables the same. When you handle the two doughs, the difference is immediately obvious. The autolysed dough is smoother, stretches more easily, and requires fewer folds to develop full strength.
The finished loaves will tell the story too. The autolysed loaf typically has a more open, even crumb, better oven spring, and a more extensible dough that scores cleanly. The differences are subtle with white flour and dramatic with whole grains.
If you are not autolysing yet, start this weekend. Mix your flour and water, set a timer for 30 minutes, and go do something else. When you come back, your dough will already be halfway to great bread, and all you did was wait.
